Thanksgiving Wholesome Harvest Casserole with Wild Rice and Butternut Squash

Big shout out to Gaining Life With Melissa for this tasty recipe just in time for Thanksgiving!




Ingredients:

- 1 lb cooked ground beef, ground turkey, or shredded chicken

- 2 tablespoons avocado oil, plus more for baking dish

- Sea salt

- Ground black pepper

- 2 tbsp avocado oil divided

- 1/2 onion, chopped

- 1 medium butternut squash, cubed

- 1 pound fresh green beans

- 1 tsp dried thyme

- 1/2 teaspoon smoked paprika

- 1/4 cup vegetable broth

- 6 cups cooked wild rice

- 1/2 cup dried cranberries

- 1/2 cup sliced almonds (optional)


Instructions:

1. Preheat the oven to 350 degrees 2. Grease a 9-by-13-inch baking dish

3.. In a bowl, toss onion, green beans, and squash with avocado oil and seasonings.

4. Sauté in skillet until softened, approximately 15 minutes.

5. Stir in cooked rice, broth, and cranberries.

6. Top with almonds (Option to add cooked protein of choice)

7. Bake for 20 minutes.
